In case you haven’t noticed, I am all about easy. As the mom of three young men, we’ve been on the go for a long time…soccer games, swim meets, Boy Scout meetings, etc. You know what I’m talking about! I’ve simplified my meals down to a science. One of our favorite meals to throw together is Mexican Chicken Fajitas. Everyone makes a burrito, nachos, burrito bowl or salad! And everyone is happy and well fed.
I’m not much of a recipe girl for most things so it’s tough to put exact measurements to this recipe. Feel free to tweak as you go. One suggestion I have is to buy your herbs and seasonings in bulk and store them in your freezer. I typically buy one pound bags of organic herbs and store them in mason jars. Then as I need them, I’m able to pull them out and use what I need. They hold up beautifully being stored in the freezer.
I am a big fan of frozen bagged boneless, skinless chicken tenders. They are easily thawed or with some Instant Pot recipes I’m able to throw them in frozen and they cook quickly. Aldi has a great option or Harris Teeter often has them on BOGO special!
With Mexican chicken fajitas, I usually make a bowl of guacamole, salsa, brown rice and black beans for the carb eaters at our house, shredded Colby-jack cheese, black olives and chopped lettuce. I put a buffet out and everyone eats to their hearts content. Within 45 minutes, dinner is on the table!
